Thanks for the help, but I finally sorted it by uninstalling everything
(apache, MySQL and PHP) and installing a package called PHPHome from
http://phphome.sourceforge.net
Quote from the readme file "PHP Home Edition is a powerful and flexible

software is bundled with special support libraries and powerfull phpMyAdmin
database GUI."
After installing this which had an older version of MySQL (which I have
since updated) an older version of Apache (which I haven't) and anewer
version of PHP (version 5) everything works fine.
I can only assume that I had not configured something quite right, but for
the life of me I can't see what it is.
