I have never been a big believer in upgrades. I would:
1: Run the Upgrade advisor to pick up on any obvious problems.
2: Back up and restore 2000 dbs to a new instance of 2005.
3: Migrate your users (great time to clean up access to the server)
4: Run through a QA regiment.
This gets you on 2005 cleanly
