Maybe this way:
previous:
SELECT * FROM adresse WHERE nom<='Dupont' AND id<>123 ORDER BY nom DESC LIMIT 1
next:
SELECT * FROM adresse WHERE nom>='Dupont' AND id<>123 ORDER BY nom ASC LIMIT 1
