I wouldn't use Scotch Bonnet or Birds Eye as then you wouldn't be able to
taste the other nice ingredients (bacon, etc). Something a little less hot
than those, but with a little more pep than jalapeno.

I've got a chilli bush on my windowsill. The fruit are about 30mm long
though.

Nah -- that would ruin the Italian-ness of it. If you're going to garnish
with a chopped herb, perhaps parsley?
Aside: What did the Indians and Thais eat before 1492? (Nothing too spicy
for sure.) What did the Irish eat? (No potatoes.) What about the Italians?
(No tomatoes.) I have been curious about this for a while.
