seriously though, heres the technique i use for tough meat: take a nice
stout, sharp fork and stab the bitch so there are at least 3 deep holes per
square centimeter. then turn it over and repeat. place in a soy sauce or
teriyaki or other marinade adding a bit of meat tenderizer to the mix.
cover and wait a few hours. then flip, baste, and cover for a few more
hours. over night is good too. then cook slow and low, for like three
hours or more. whet yer whistle and dive in to melt in your mouth meat.
maybe that just works on a few meats, but id give it a try on even
squid/octopus.
i even like toaster ovens compared to big ovens, if the meat will fit.
