They're both competent web-servers. IIS used to have a lot of security
problems, but that's largely fixed. It also used to be that IIS is much
faster at serving static pages, but nowadays Apache uses low level
calls to send files too. So there really isn't a huge difference.

Personally I like to use Apache just because the text-based
configuration file makes it easier to replicate development settings on
a production server.
