Take a look at the Gentoo Mac OSX, http://www.gentoo.org/proj/en/gentoo-alt/macos/
Then you can just emerge php and it installs quite nicely.
Keep in mind that Gentoo Mac OSX isn't the same as Gentoo Linux PPC.
