Here's an example of proper headers:

$mail_headers = 'From: "Sender Name" <sender@domain.com>' . "\n"
.. 'MIME-Version: 1.0' . "\n"
.. 'Message-ID: <' . md5(uniqid(time())) . '@domain.com>' . "\n"
.. 'Content-Type: text/html; charset="iso-8859-1"' . "\n"
.. 'Content-Transfer-Encoding: 8bit' . "\n"
.. 'Importance: Normal' . "\n";
