It doesn't mention text/html support either, so why send HTML in
preference to XHTML?

Konqueror supports XHTML served as application/xhtml+xml just fine. The
HTTP Accept header (for Konq 3.1.4) is:

Accept: text/html, image/jpeg, image/png, text/*, image/*, */*
