We started something a bit similar for a client a while ago.
Far be it for me to tell you how to do it but...

Try to think of it as storing _appointments_ rather than available /
unavailable blocks. With sensible indexing of the date/time fields,
and regular (automated?) purging of expired data, should be OK?

Also make uers' life easier by using a Javascript calendar to select
dates.
