There are probably two or three people worldwide (at most) who have "total
and complete mastery of everything PHP has to offer".
Seriously, how many people can claim to have used *all* of these:
http://uk2.php.net/manual/en/ref.kadm5.php
http://uk2.php.net/manual/en/ref.dbase.php
http://uk2.php.net/manual/en/ref.openal.php
http://uk2.php.net/manual/en/ref.net-gopher.php
PHP's got tonnes of stuff that is useless to the vast majority of people.
Yes, there will occasionally be someone who uses these functions, but I
suspect that most people here could lead a perfectly happy life without
them.
I suppose most employers would expect a good grounding in maths, arrays,
strings, regular expressions, file IO, classes and whichever database
package they use, as well as an excellent knowledge of PHP syntax and the
predefined superglobals.
