OSCommerce is one, another is Zen Cart (itself a fork of OSC from a few
years ago).
They both have their own learning curve, but once you get the hang of it
they can be modded pretty much to suit your will. ZC (& OSC I would
imagine) support an "override" system so that if you've done a lot of
customization, you won't have to re-write everything when a new version
comes out.
